Katkoot White Burgundy Premier Cru originates from a unique Premier Cru vineyard in Pouilly-Fuissé, Bourgogne, France. Shaped by limestone, elevation, and silence. WINEMAKING PROCESS:
Crafted from hand-harvested Chardonnay grapes, gently pressed in whole clusters to preserve purity and texture. Fermentation begins directly in old toasted Allier oak barrels and continues undisturbed for 24 months on the lees. Natural malolactic conversion occurs in barrel, enhancing balance and length. This slow élevage builds depth, minerality, and precision while remaining true to the character of the vineyard.
