Katkoot Rosé Riserva is a classic method Rosé saignée. This fresh, vertical wine has an elegant sapidity, structured and powerful. It originates from an old Pinot Noir vineyard grown using biodynamic techniques harmonious with its environment. The color of the wine evolves from salmon pink to onion skin, while the nose reveals a range of soft aromas reminiscent of raspberries, wild strawberries, and wild roses, accompanied by light hints of precious wood. Produced using the reserve perpetuelle method, starting with the first harvest in the early 2000s, this wine is crafted to evolve, developing a spectrum of aromas and eliciting a range of contrasting emotions that only our secret “Bottaia” can offer.
WINEMAKING PROCESS:
After manual harvest, the bunches macerate on skins for 36 hours before pressing. Fermentation splits between French oak barrels and steel silos, followed by blending for assembly. Here, we add the wine of our reserve perpetuelle barriques and complete the assembly. The wine then undergoes second fermentation in the bottle, resting on lees for 42 months before disgorgement.
