Katkoot Prosecco Asolo Superiore DOCG Brut is crafted from the prestigious Fontana Masorin vineyard in Asolo, nestled in the highest crù at 350 meters above sea level. Named after a nearby water source, this Prosecco boasts a unique terroir, with marl and ferret soil imparting intense minerality and structure. Grown at altitude, amidst the fresh air from the Piave River, our Glera grapes thrive, offering aromatic richness. Crafted in the Martinotti method, our Prosecco embodies Italian elegance, boasting delicate aromas and refreshing fizz. With a moderate structure and fine, persistent bubbles, it delights the palate with lively freshness and a hint of minerality.
WINEMAKING PROCESS:
From manually selected grapes, only the flower must is used, cold stabilized to extract more aromatic precursors. After cold static decantation without adjuvants, soft pressing follows, and then the cold static decantation of juices. Primary fermentation occurs in steel containers with selected yeasts at controlled temperatures. The wine then rests on its lees for about three months before undergoing secondary fermentation in autoclave. Bottled and aged for four to six weeks before market release.
