Katkoot Champagne Dosage Zero Premier Cru originates from the vineyards surrounding Chigny-les-Roses, a renowned Premier Crù in the Champagne region of France. Carefully blending the 2017 harvest with three selected older vintages, we create “la Cuvée Katkoot.” For each release and disgorgement, we meticulously balance the proportions of these vintage reserves to achieve optimal results and maintain excellence. Grown using biodynamic techniques that harmonize with the environment, the wine exhibits a lightly golden color with aromas of white fruits, spices, and a hint of bread crust. Additionally, as a zero-dosage champagne, no sugar is added at disgorgement, resulting in a pure and unique taste.
WINEMAKING PROCESS:
Crafted exclusively from the highest quality juice, hand-selected grapes undergo meticulous pressing with Coquart presses. Fermentation occurs slowly in stainless steel and oak foudres from several different harvest years. A key factor in Katkoot Champagne’s exceptional quality is its aging process. Spending a minimum of six years on the lees, it develops a remarkable depth of flavor and complexity.
